French Beans Potato Curry Recipe

Ingredients:

  • 250 g – French beans cut into 1-inch length
  • 1 – Potato, large, sliced into quarters
  • 1 – Onion, sliced
  • 1 Tsp – Cumin seeds
  • 1 Tbsp – Oil
  • 1 – Tomato, chopped
  • 1 Tsp – Turmeric powder
  • 1 Tbsp – Coriander powder
  • 1 Tsp – Cumin powder
  • 1/2 Tsp – Pepper powder
  • 1 – Green chilli
  • Salt – as per taste
  • 1 cup – Water

Method:

  • Heat 1 Tbsp of oil in a pan or kadai on medium to high heat.
  • Add the cumin seeds and let it splutter.
  • Add the onions and green chilli. Saute till onions are translucent.
  • Add the french beans and potato, season with salt, toss for a while then cover and cook until both beans and potato are half cooked. Stir in between to avoid vegetables burning.
  • Add the masala powders and tomato, fry until tomato is cooked.
  • Taste and see that the masala is done.
  • Add water, cover and cook for 5 minutes on low heat.
  • Once the gravy is of your desired consistency, remove from heat.
  • Serve hot with rice, chapatti, parotha or puri.
